Instructions:
Prepare the Stir-Fry Sauce:
In a small bowl, whisk together the soy sauce, water, rice vinegar, honey (or maple syrup), and cornstarch until the cornstarch is fully dissolved. Set aside.
Prepare the Tofu:
Cut the tofu into 1-inch cubes and press it to remove excess water. To do this, wrap the tofu in a clean kitchen towel or paper towels and place something heavy on top, like a cast-iron skillet, for about 20-30 minutes. Then, cut the tofu into cubes.
Fry the Tofu:
Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the tofu cubes and cook until they are golden brown on all sides. This should take about 5-7 minutes. Remove the tofu from the skillet and set it aside.
Stir-Fry the Vegetables:
In the same skillet or wok, add the sesame oil. Add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant.
