Ingredients:

2 tablespoons of water

1 tablespoon rice vinegar

14 oz (400g) extra-firm tofu, pressed and cubed

2 tablespoons vegetable oil (for frying tofu)

1 tablespoon sesame oil (for stir-frying)

1 bell pepper, sliced into strips

1 medium carrot, julienned

1 cup broccoli florets

1 cup snow peas, trimmed

1 cup sliced mushrooms

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

Cooked rice or noodles for serving

Instructions:


Prepare the Stir-Fry Sauce:


In a small bowl, whisk together the soy sauce, water, rice vinegar, honey (or maple syrup), and cornstarch until the cornstarch is fully dissolved. Set aside.

Prepare the Tofu:


Cut the tofu into 1-inch cubes and press it to remove excess water. To do this, wrap the tofu in a clean kitchen towel or paper towels and place something heavy on top, like a cast-iron skillet, for about 20-30 minutes. Then, cut the tofu into cubes.

Fry the Tofu:


Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the tofu cubes and cook until they are golden brown on all sides. This should take about 5-7 minutes. Remove the tofu from the skillet and set it aside.

Stir-Fry the Vegetables:


In the same skillet or wok, add the sesame oil. Add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant.

Add the bell pepper, carrots, broccoli, snow peas, and mushrooms. Stir-fry for about 3-5 minutes until the vegetables are tender but still crisp.

Combine Tofu and Sauce:


Return the cooked tofu to the skillet with the stir-fried vegetables. Pour the stir-fry sauce over everything.

Stir and Thicken:


Stir everything together and let it cook for an additional 2-3 minutes, allowing the sauce to thicken.

Serve:
