Ingredients:

1 1/2 cups Arborio rice

8 oz (about 2 cups) mushrooms (cremini, shiitake, or a mix), sliced

1 small onion, finely chopped

2 cloves garlic, minced

4 cups vegetable or chicken broth, kept warm

1/2 cup dry white wine (optional)

2 tablespoons olive oil

2 tablespoons butter

1/2 cup grated Parmesan cheese

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish (optional)

Instructions:

Sauté Mushrooms:

In a large skillet or saucepan, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced mushrooms and cook until they release their moisture and become golden brown, about 5-7 minutes. Remove the mushrooms from the skillet and set them aside.

Sauté Onion and Garlic:

In the same skillet, add the remaining olive oil and 1 tablespoon of butter. Add the chopped onion and cook for about 3-4 minutes until it becomes translucent. Add the minced garlic and cook for another minute until fragrant.

Toast the Rice:

Add the Arborio rice to the skillet with the onion and garlic. Stir the rice for 1-2 minutes until it's well-coated with the oil and slightly translucent around the edges.

Deglaze with Wine (optional):

If using wine, pour it into the skillet and stir until most of it is absorbed by the rice.

Add Broth:

Begin adding the warm broth to the skillet, one ladleful at a time. Stir the rice constantly and allow the liquid to be absorbed before adding more. Continue this process until the rice is creamy and cooked to your desired level of doneness. This should take about 18-20 minutes.

Add Mushrooms and Butter:

When the rice is almost done, add the sautéed mushrooms back into the skillet. Stir to incorporate them into the risotto. Add the remaining 1 tablespoon of butter and stir until it's melted and the risotto becomes creamy.

Stir in Parmesan:

Stir in the grated Parmesan cheese until it's melted into the risotto. Season with salt and black pepper to taste.

Serve:

Serve your mushroom risotto hot, garnished with chopped fresh parsley if desired.
